Warm Broccoli Potato Soup
This soup is wonderful for when you are not feeling your best or on a chilly day.
What you will need:
2 large russet potatoes peeled and chopped
2 cups frozen or fresh broccoli florets
1 medium onion chopped
2 medium sized carrots (or 1 large carrot) peeled and chopped
3-4 cups of veggie broth or water depending on desired thickness
1 cup of coconut cream
1 cup packed chopped spinach
1 tbsp. cooking oil of your choosing
2 tbsp. better than bouillon no chicken base
2 tbsp. nutritional yeast
Pepper to taste
Chopped Scallions for garnish (optional)
Boil the potatoes, onion, oil and carrots in the veggie broth or water and the no chicken base for 12 minutes
Add in the broccoli, nutritional yeast, coconut cream and pepper and boil on low heat for another 5 minutes
Add the spinach and boil on low-medium heat for 2 more minutes
Blend half the soup with a hand blender or external blender
Serve with chopped scallions (optional)
This can be stored for up to 5 days. It will create about 4-5 bowls of soup
