Hearty Veggie Soup

This soup is wonderful for a chilly rainy or snowy day!


What you will need:


  • 6 cups veggie broth or water

  • 3 tbsp. better than bouillon no chicken or veggie base

  • 1 small eggplant peeled and diced

  • 1 back of washed and diced mushrooms of your choice

  • 2 cups of diced broccoli

  • 2 large potatoes chopped

  • 1 medium onion chopped

  • 1 cup faro (optional)

  • 1 tbsp. cooking oil

How to prepare this recipe:


  1. Boil your water or veggie broth with the better than bouillon base seasoning, oil and the potatoes for 10 minutes

  2. Add the rest of the ingredients and boil on low to medium heat with a cover for another 12 minutes

  3. Turn off the heat and serve. This can be stored in the fridge for up 5 days.
