Cashew Rice Veggie Sushi

This delicious recipe is nutritious, raw and wonderful for summer!


What you will need:

  • 3/4 of a Hass avocado peeled and sliced vertically plus 1/4 for the cashew rice

  • 1/3 cucumber peeled and sliced vertically

  • 1/4 bell pepper sliced vertically

  • 2 nori sheets

  • 1 cup cashews soaked in water overnight (or boiled for 10 minutes)

  • 1 tsp miso paste (optional)

  • Salt and/or garlic powder to taste:

  • 2 tsp lime or lemon juice

How to assemble it:

  1. Add the cashews, miso paste, garlic, salt, 1/4 avocado, and lemon/lime juice in a food processor and process until a rice like crumble is formed

  2. Add 1 nori sheet onto a bamboo mat

  3. Spread 1/4 of the cashew rice and add your veggies similar to the picture below.

  4. Add water to the ends of each side of the nori sheet and gently roll with the mat

  5. Then cut in 3/4- 1 inch pieces

  6. Serve with liquid amino, soy sauce or tamari
